‘House wines are low in price and sell quite frequently, thus the preservation and precise pouring features are less important. The systems are designed to help a restaurant offer better and higher price point wines by the glass instead of only by the bottle. Bottle margins are significantly lower than by the glass,’ says Fournier.
Other ways to reduce waste include purchasing software that offers statistics for analysis and reporting to make smarter choices about what you’re dispensing as well as remembering to keep dispensers clean, which increases the lifespan and the reliability of the dispensers.”
